They love to ask me before making finance-related decisions, such as property investment, car purchase, superannuation contribution, structure of business etc.

We would normally clarify what the client's needs and requirements are and then estimate the work load and complexity. We will negotiate a price with the client before I start. Then we will put the agreed scope of work and fee into "Letter of Engagement".
